Tuna Casserole

Tater tot casserole


This is my menu for the week. All dishes will be served with Vegetables, or salad or lovely fresh asparagus! Fried chicken, will be served with mashed potatoes and jello with shredded apples in it, and a veggie of some form.

Mac and cheese will be served with a salad, as will the biscuit bake and tater tot casserole.

Tuna casserole will be served with peas and freshly made dinner rolls.

Teriyaki chicken will be served as a chinese dish with rice and stir fry veggies.

This is a very easy marinade. I use 1-C of Tamari sauce (this is just like soy sauce only healthier not as processed) a tablespoon of brown sugar and 1 teaspoon of garlic powder. I add this to a gallon sized ziploc baggie then add some boneless skinless chicken and let it soak for the whole day and then bake in oven at 375 for one hour. This is a family favorite so I use two packages of the chicken.

Frugal Fridays


As promised I am going to make a short post on how we supplement our menu to stretch is further.

Well we use dried red beans and rice. These are also wonderful toys for a toddler during

school:-) I put in my crockpot the night before two cups of beans and fill with water. Then in the morning I drain the water ad a cup or two of rice and then put in 4 cups of vegetable broth, green olives, onions, you could also use leftover chicken pieces if you want. For seasoning I add a tablespoon of chilli powder, a couple pinches of salt, garlic powder, onion powder, cumin. You can add anything else you have a notion to as this is a wonderful dish to experiment with. I then cook on high setting for most of the day. Sometimes during the afternoon I have to turn it down so it doesn't get sticky. For supper I would serve this on tortillas with cheese, salsa, sour cream, green onions and tomatoes, add a side salad and you have a very hearty dish as almost no cost. We eat on this for several meals. It is just as good for lunch as it is for supper. I have many others but will save those for other Fridays (Lord willing).
